Irish fire safety regulations require all commercial kitchens to have a wet chemical extinguisher. This applies to hotels, restaurants, schools, care homes and any premises with commercial cooking equipment.
Wet chemical fire extinguishers — identified by their yellow label — are
specifically designed for Class F fires involving cooking oils and fats.
A wet chemical extinguisher is a legal requirement in all commercial
kitchens in Ireland under Irish fire safety regulations and IS 291.

Wet chemical extinguishers work in two ways. The wet chemical agent
reacts with the burning oil to form a soapy foam layer that seals the
surface of the burning oil, preventing oxygen from reaching it and
stopping re-ignition. At the same time, the agent cools the burning
oil, reducing the temperature below its ignition point.
This dual action makes wet chemical extinguishers the only type safe
and effective for use on Class F cooking oil fires. Never use water,
foam or CO2 on a cooking oil fire — these can cause a violent
flashback reaction that makes the fire significantly worse.
